Apple & Blackberry Crumble
Here is a little simple recipe I found in 150 baking recipes, one it's super easy and tastes so good.
900g/2 Ib cooking apples
300g/10 1/2 oz blackberries, fresh or frozen
55g/2 oz light muscovado sugar
1tsp ground cinnamon (I used mix spice and it was perfect)
custard or pouring cream, to serve (optional but highly recommended)
Preheat the oven to 200c/400f/Gas mark 6
Firstly you need to peel and core the apples, then cute them into chunks (I cut mine a little too big so make them bite size).
Put them in a bowl with the blackberries, muscovodo sugar and cinnamon and mix together, then transfer to a 900-ml/1 1/2 pint baking dish.
85g/3 oz self-raising flour
85g/3 oz wholemeal pain flour
115g/4 oz unsalted butter, diced
55g/2 oz demerara sugar
To make the crumble topping, sieve the self-raising flour into a bowl and stir in the wholemeal flour. Rub in the butter with your fingertips until the mixture resembles coarse breadcrumbs, stir in the Demerara sugar.
Spread the crumble topping over the fruit and bake in the preheated oven for 40-45 minutes, or until the apples are soft and the crumble is golden brown and crisp. Serve with custard, if using.
