will you be mine? Valentine red velvet cupcakes

Valentines Day is this weekend! What better way to show your valentine, you care by making them these delicious fail-proof cupcakes. I'm the kind of person who loves to give a gift with thought but I don't like to spend all day slaving in the kitchen so I opted for this Cupcake mix by Betty Crocker from my local supermarket. So if your lover likes food you have a winner with this simple recipe.

 All you need is:

  • 30ml vegetable oil (2 tbsp)
  • 60ml water (4tbsp)
  • 2 medium Free Range eggs 
  • Red velvet cupcake mix (provided in pack) If you'd like to make your own click here 
  • Regular size muffin tray
  • Mix it all together :)

Pour mixture evenly into Cupcake cases

Place in the centre of the over for 15-17 minutes at 180 oC (160 oc for fan oven)! Until knife comes out clean. leave to cool. 

Create icing using: 
  • 60g soft butter
  • 10ml water (2tsp)
  • Icing mix (provided in pack)
Spread on the cooled cupcakes and scatter chocolate flakes on top for a fabulous finish! I added a candy cane just for fun :)
